At this time of year, we dedicate ourselves daily to winter pruning\u2014a crucial moment that shapes the future of the vine and, ultimately, the quality of the wine you will enjoy in the years to come.<\/p>\n\n\n\n<p>But what does pruning really mean? And why do we carry it out with such care, never delegating this task to external hands?<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Pruning is Where Wine Begins<\/h3>\n\n\n\n<p>Looking at a vine before pruning, you\u2019ll see it still covered in last year\u2019s shoots. Our goal is to select only the right ones, shaping the plant for optimal growth and ensuring the perfect balance between vegetation and fruit.<\/p>\n\n\n\n<p>The two main techniques we use are:<\/p>\n\n\n\n<ul>\n<li><strong>Guyot Pruning<\/strong>&nbsp;\u2013 Here, we select a fruiting cane, the long shoot from which new buds\u2014and eventually grape clusters\u2014will grow, along with a spur, which is cut short (about 5 cm, with two buds) to support future production the following year. The fruiting cane, initially vertical, is then bent and tied to the support wire horizontally, ensuring orderly vine growth.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"637\" src=\"https:\/\/sanlorenzomontalcino.it\/wp-content\/uploads\/2025\/01\/potatura-invernale.jpg\" alt=\"\" class=\"wp-image-6761\" srcset=\"https:\/\/sanlorenzomontalcino.it\/wp-content\/uploads\/2025\/01\/potatura-invernale.jpg 1024w, https:\/\/sanlorenzomontalcino.it\/wp-content\/uploads\/2025\/01\/potatura-invernale-300x187.jpg 300w, https:\/\/sanlorenzomontalcino.it\/wp-content\/uploads\/2025\/01\/potatura-invernale-768x478.jpg 768w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Brunello di Montalcino Sanlorenzo<\/p>\n\n\n\n<p><strong>Spur Cordon Pruning<\/strong>&nbsp;\u2013 In this method, the shoots are cut shorter, leaving only 3-4 spurs, each with two buds. These will develop into new shoots, which will bear the grape clusters for the next harvest.
